My father has always said that if you make something well, people will go out of their way to get it. I suspect many folks would do just that for Terri Horn’s Salty Oats cookies.
Terri Horn, the brilliant baker behind these cookies, grew up spending summers on Cape Cod. Originally from Washington DC, her dream was to ultimately set up her own baking business somewhere near the sea. Trained as a pastry chef, Terri developed the recipe for her signature cookies as a side project and it wasn’t until she was on a kayaking trip with friends in Maine that she finally made the decision to found her own business. Appropriately enough, she named her enterprise Kayak Cookies!
Since then, she has been making her original cookie – a kind of amped-up oatmeal raisin cookie sprinkled with salt. The oatmeal raisin cookie was subsequently joined by a chocolate cookie that contains, among other ingredients, coconut, oats and chocolate chunks. These two are the flagship flavors – bags are available in one flavor or the other or, for those who can’t choose between the two, there is the mixed bag. Also, at the Cambridge shop, we usually break open a bag and sell the cookies on an individual basis at the register – this has proved to be popular with folks who pop in to the shop to pick up lunch.
Terri makes every effort to source as many organic ingredients as possible – she uses organic oats, eggs, coconut, whole wheat flour and raisins to mention only a few. All of her cookies are handmade in Cape Cod in small batches. Attention to detail and commitment to quality shine through and one of her cookies, paired with a glass of cold milk or a cup of hot coffee, always goes down easily!
This past week, Terri just released her latest addition to the Salty Oats family – a cookie with chocolate chunks, a touch of coconut and pecans. As a baker myself, I immediately thought of Southern favorites – pecan pie and coconut cake!
