A Reuben Ready for the GrillMany folks are familiar with the Saturday BBQ that happens out front of our Cambridge shop from early spring through mid-fall. When BBQ season ends, it is a sad day in the shop. We are somewhat mollified, however, by the onset of Reuben season. Instead of BBQ, each Saturday, trays of Reubens are prepared for toasting on the panini grill.

One recent Saturday, staffers were swapping bits of Reuben lore gleaned via word of mouth. Because our collective knowledge consisted primarily of hearsay, we decided to take things a step further, do a little research and get the definitive story behind this iconic sandwich.

We are excited to announce that Julie’s Rabbit Pâté was a winner in the ‘Charcuterie’ category at the 2012 Good Food Awards and was recently featured in a Bon Appétit magazine article entitled, “America’s Best Charcuterie.”

Rabbit Pâté

Choosing a favorite pâté is a little like selecting a favorite child. Each has its own attributes and unique characteristics that differentiate it from its siblings. That said, our house-made Rabbit Pâté would be a strong contender for the top of my “favorites” list. Wrapped in rose-hued Prosciutto di Parma and encased in amber-colored Madeira aspic, this pâté is our most intricate and, in my opinion, visually appealing.

One of my favorite things about cooking at Formaggio Kitchen is the wealth of wonderful ingredients at our fingertips. Working here as a chef is like being a kid in a lollipop factory. It is as much a treat to cook as it is to eat here, and often the ingredients that we get to use in our recipes add up to more than the sum of their parts. Such is the case of the Rabbit Pâté. Potato, speck, garlic, Fontal, parm and arugula pizza.

Recently, a fellow monger, Mike, and I decided to have a leisurely pizza night at home. The weather outside was frightful, a movie was so delightful, and since there was no place to go, we made pizza. Pizza, beers and movies. Classic. However, instead of ordering from the mediocre pizzerias in my neighborhood, we decided that it would be more fun to make it ourselves! (more…)

By now you’ve probably (hopefully) heard about our Super Bowl BBQ + Beer Bonanza, February 6-7, here at FK. Inside, we’ll have free tastings of beers from our favorite brewers. Outside, Grillerator Eric will host a special session of our popular summer sidewalk barbecue, cooking up the usual menu of ribs, pulled meats and hot dogs.

Eric has also promised a few specials based on the regional BBQ styles of the two Super Bowl contenders, which probably means something Cajun-style in honor of the NFC-champion New Orleans Saints (think andouille!). Indianapolis, home of the AFC-champion Colts, is a bit more of a head-scratcher, Eric admits, with no well-known BBQ tradition. (The Hoosier State does, however, boast a beloved dessert called sugar cream pie with a filling made of, well, sugar and cream.)

Come by Super Bowl weekend to see what Eric comes up with. And remember that if Minnesota had made it to the big game in place of New Orleans, for better or worse, you might have gotten to try the first-ever pulled lutefisk sandwich.
