Fancy Food Show with Jamie Montgomery and Jason Hinds

At this year’s Winter Fancy Food show in San Francisco, I and two of my colleagues at Formaggio Kitchen – Kyra and Julia – were treated to a special opportunity: to taste Montgomery’s cheddar guided by an expert from Neal’s Yard Dairy and the cheese maker himself, Jamie Montgomery. The folks from Neal’s Yard, with whom we have a particularly close relationship, visit our shop on a relatively frequent basis but this particular event was a rare opportunity as Jamie only makes it States-side once a decade. In general, he prefers staying down on his Somerset farm with his herd of 200 Friesian cows and aging wheels of clothbound cheddar, to standing in front of an eagerly-attentive audience. But with a characteristic English intonation the 3rd generation cheesemaker did not disappoint. Far from it. (more…)

Bra, Italy - Respect the City of CheeseEvery two years, the biggest festival in the cheese world happens in Bra, Italy. The event is known simply as “Cheese.” Cheesemakers, cheesemongers, journalists, food lovers and folks lucky enough to live close by, descend on the small town of Bra to sample, sell and eat literally tons of cheese. This year at the biennial festival it was no different. With one exception. The thermometer hit a whopping 90°F. (more…)

In 75 A.D. the Romans picked a nice spot in what is today southern Wales to build a fort or caer. A few hundred years later Saint Cenydd entrusted the monastery he started there to his son Ffilli, and thus was born the beginnings of the town of Caerphilly. (more…)

Hafod at Formaggio Kitchen

Part of what makes Formaggio Kitchen such a special place to work, as you may have gleaned from our other posts, is that our products, and our cheeses in particular, are sourced directly from producers and affineurs rather than second or third hand via American importers and distributors. As you can imagine, if you’ve seen our cheese selection, this is a pretty enormous task, so several of us play a part. My role, among other things, is that of British Isles cheese buyer. (more…)
